VegInspired CEO, Cookbook author and Food-as-Fuel advocate Kathy Davis is joining me to share her healthy daily habits and how she makes plant based on-the-go work while traveling the United States in an RV with her husband, and cats. They’ve been to 26 states and 19 national parks so far, and have a goal to visit all the US national parks!
We’ll cover misconceptions about a plant based diet. Using food as fuel to achieve your personal and professional goals. And maintaining a mindset of intention, not perfection when it comes to what you eat… while also sticking to whole food, plant based meals and avoiding the junk food vegan trap!

As I hinted at in that chat, one of the things I’ve changed my mind on since I first became vegan is the amount of effort needed to create a delicious and nutritious meal.
I used to regularly cook multiple components to every meal. I guess I had a point to prove. How healthy and delicious the food could be and yet for most of us that level of effort is not fun or sustainable.
If Kathy can travel the states in an RV while working full time and keep her meals simple and enjoyable then so can those of us with a stable home base!
I recently spent 6 days in NZ visiting dear family friends and the way I eat was zero trouble. I bought a few simple staples – roasted chickpeas, frozen broccoli, tahini, sirarcha mayo, cashews and hemp seeds AND was also gloriously surprised by how easily friends cooked for me! Like it was no big deal! Which it absolutely does not need to be.
