Liz Douglas is a home cook, new mum and the person behind the easy, familiar plant-based recipes of Glow Diaries.
As someone who had always loved food and liked cooking, when Liz became vegan, the challenge of recreating old favourite meals was exciting. She was curious, inspired and started sharing her new favourite hobby on Instagram to prove that plant-based food could be delicious, familiar, and filling.
It seems Liz jumped straight to that most effective of strategies… lead first with deliciousness, however there were and are struggles which she shares today. Liz’s warm, genuine approach is infectious. Her recipes look delectable and I loved this conversation.
