Aubry and Kale Walch are the sibling owners of The Herbivorous Butcher, the world’s first vegan butcher shop in Minneapolis.
To quote the brother and sister team: We started The Herbivorous Butcher to bring you small-batch plant based meats that are always fresh, flavourful, and protein-rich so you never feel like you’re sacrificing anything for healthy and ethical eating.
The Herbivorous Butcher story is one of patience, persistence and, of course deliciousness.
It’s also a wonderful, inspiring example of how those love filled family celebrations around food can remain just that when you adopt a vegan lifestyle. How you can enjoy the same meals – the same traditions – just animal free.
The powerhouse Herbivorous Butcher team are doing A LOT. While remaining steadfast in their commitment to super small-batch ALL VEGAN meat-free meats and cheese-free cheeses.
In January 2017 they launched their non-profit farm sanctuary, Herbivorous Acres, to further their mission of saving animals and educating people about the harm caused by animal agriculture.
For those of us not in the US, do not fear, we can still get a taste for all the goodness Aubry and Kale are creating via The Herbivorous Butcher Cookbook. Of the 75 innovative recipes for plant-based meats and standout vegan dishes… I’m especially drawn to the Roti Jane.

I truly hope this book is a glimpse of the future— a delicious, compassionate future.
